This latte will rock your world! It's without a doubt on of my favourite warm drinks, because it's super quick and easy to make, and the sweet, creamy, caramel flavour is unlike anything else. Give it a go - you won't be disappointed.

INGREDIENTS
½ cup (120 mL) full-fat coconut milk (from a can)
¼ cup (45 g) coconut sugar (or sub light brown sugar)
½ tsp ground cinnamon
2 shots (⅓ cup, 80 mL) espresso (or sub strong pour-over coffee)
1½ cups (360 mL) barista oat milk*
⅛ tsp pure vanilla extract (optional)
Optional Garnish
Foamed milk
Ground cinnamon
Directions
To a medium saucepan, add the coconut milk, coconut sugar, and cinnamon. Bring to a boil, then reduce to a simmer, cooking uncovered for 5 minutes. Stir often throughout to prevent it from burning.
Meanwhile, brew the espresso into your desired cups. We used a shot of espresso per cup, but feel free to add more if desired.
Returning to the saucepan, you'll see the coconut mixture will have thickened a bit into what resembles a caramel sauce. To this, add the oat milk and vanilla, and whisk to combine. Bring to a boil, then remove from the heat.
Pour the warm cinnamon coconut milk mixture overtop your espresso. Top with foamed milk or whipped cream, and a sprinkle of cinnamon overtop if desired. Enjoy!
Notes
* Barista milks often have a higher proportion of fat and carbohydrates than other plant-based milks, which give it a nice creamy mouthfeel. This is our preferred plant-based milks for lattes, but feel free to substitute it for any other plant-based milk you enjoy.
Storage: best if enjoyed immediately.
