Sweet from the melon, sour from the lime, and a kick from the ginger. This refreshing drink is everything a hot day calls for. As a bonus, the melon is also a wonderful source of vitamin C!
Refreshing Melon Cucumber Soda

Servings: 4 servings (approx. 1½ cups each including ice) Total Time: 10 min
INGREDIENTS
3½ cups (610 g) honeydew melon, cut into small cubes (from about 1 small melon)
¼ cup (60 mL) lime juice (from about 2 limes)
½ Tbsp (4 g) fresh ginger, grated
2 cups (440 g) crushed ice
¼ cucumber, thinly sliced
1½ cups (360 mL) carbonated water (add more to taste)
Agave syrup to taste
Optional Garnish
1 lime, in wedges
3 Tbsp (36 g) granulated sugar
Directions
To a high-speed blender, add the melon, lime juice, and fresh ginger. Blend until smooth.
Use the lime wedge to run around the rims of your serving glasses. Pour the sugar on a small plate and dip the edge of the glass in the sugar to create a decorative rim.
Divide the crushed ice between the glasses, and top it with the cucumber slices.
Pour overtop two parts blended melon mixture, to one part carbonated water. Add agave syrup to taste, and enjoy!
Notes
Variations: add 1 Tbsp fresh mint leaves or basil leaves to the blender for a unique twist.
Storage: best if enjoyed immediately. The blended melon can be stored in a glass jar in the fridge for up to 1 day.
