Peanut butter and jelly is a classic for a reason. This oatmeal combination is comforting and delicious. We stirred in some frozen berries, given their more affordable and readily available in the autumn months, but if you have fresh berries on hand, feel free to throw those on in there too!

Peanut Butter & Jelly Overnight Oats

INGREDIENTS
½ cup (45 g) old fashioned rolled oats (gluten-free if desired)
½ cup (125 mL) plant-based milk*
½ cup (50 g) frozen mixed berries**
2 Tbsp (30 mL) peanut butter
1 Tbsp (7 g) chia seeds
1/4 tsp ground cinnamon
Optional toppings
Toasted peanuts
Fresh berries or stewed frozen berries
Cinnamon
Plant-based yogurt*
Directions
Combine the oats, milk, peanut butter and chia seeds together in a mason jar or air-tight container.
Add the frozen berries, mix again and let sit overnight in the fridge.
The next morning, top with desired toppings and enjoy!
Notes
*Nutrition tip: try to use a plant-based milk and yogurt that are fortified with calcium (offers approximately 120 mg calcium per 100 mL serving). For more information on calcium, check out our post.
**I prefer the texture of the frozen berries the next morning, but you can definitely use fresh if you'd like.
Storage: keep in an air-tight container in the fridge for up to 2 days.
Variations: add in mashed or cut up bananas instead the frozen berries, for a peanut butter and banana version.
