Watermelon Pizza

1 small watermelon

1.5 cups (375 ml) plant-based yogurt (we used coconut yogurt)

Fresh raspberries and blueberries

Pumpkin seeds

Pomegranate seeds

Toasted coconut flakes

Fresh mint leaves


  1. Wash the watermelon and cut into 2 cm or 1 inch thick rounds.

  2. Top each round with a couple scoops of yogurt, and spread it so that it almost reaches the rind.

  3. Add desired fruits, nuts, seeds, and other toppings.

  4. Cut each pizza into 6 or 8 slices, and enjoy!


  1. Storage: you can store pre-made pizzas in the fridge for up to 1 day. Pre-cut watermelon slices (without toppings) can stay in the fridge in an air-tight container for up to 3 days.

  2. Variations: for a bit of extra sweetness add a drizzle of maple or agave syrup. Try a tropical pizza with papaya, mango, kiwis and crushed roasted nuts like pecan or almond (see below!).
