Ultra Fudgy Sea Salt Caramel Brownies

These brownies are the BEST. Not only are they just 6 ingredients, they are super fast, and the fudgiest, most delicious chocolate packed squares you might ever put into your mouth.

I use to blend the pecans into a nut flour before mixing it with the dates, but by accident, I only coarsely chopped them into the recipe this time. Best mistake.

You can also skip the baking and just put them into the fridge and eat them raw, but something about gooey chocolate just gets me every time.

You can also roll this dough into brownie bites! Store in the fridge and you have a grab-and-go snack!

Ultra Fudgy Sea Salt Caramel Brownies

▸ ▹ Vegan, gluten-free, soy-free, one-bowl, refined sugar-free

Yield: 8-10 brownies (or 16-18 bite-sized) Prep Time: 10 min Cook Time: 10 min Total Time: 20 min


2 cups (about 20-25) pitted soft dates *

2 Tbsp (30 mL) soft or melted coconut oil

1 Tbsp (15 mL) water

1/2 cup (63 g) roasted pecans

1/2 cup (50 g) cocoa or cacao powder

1/3 cup (50 g) rough chopped dark chocolate

Large flake sea salt (optional - but highly recommended!)


  1. Preheat the oven to 180 C (350 F).

  2. In a food processor, blend the dates, coconut oil, cocoa powder and water until smooth, thick and creamy, stopping to scrape down the sides as needed. Note: if you don't have a food processor, this step can also be done by mashing the dates with a fork.

  3. Add the roasted pecans (roughly chop them first if you aren't using a food processor), chocolate and a pinch of salt. Blend, stopping to scrape down the sides, but let some chunks of pecans and chocolate remain.

  4. Smooth the batter into a parchment lined baking dish, and spread evenly. Bake for 10 minutes.

  5. Remove from oven and top with some more crushed pecans, chopped chocolate and a sprinkle of sea salt. Let cool for 15 minutes before cutting. These brownies are fudgiest if kept in the fridge. Enjoy!


  1. *if not soft, soak in warm water for 10 minutes first, then drain

  2. Storage: store in the fridge in an air-tight container for up to 5 days, or in the freezer for up to two months.

  3. Speed-it-up: skip the baking and put them straight into the fridge for some chewy no-bake brownies.
