Blood Orange Poppy Seed Loaf

I was surprised to find out that lemon-poppy seed cakes are not common in the Netherlands, so our neighbours were delighted and curious to try our blood orange and poppy seed loaf.

It's refreshing and light, perfect with a cup of tea or coffee! The icing adds just the right punch of sweetness too (not to mention it's colour is on point for spring!)

Poppy seeds are known as maanzaads (moon seeds) in Dutch!

Yield: 1 loaf Prep Time: 5 min Cook Time: 40-45 min Total Time: 50 min

1 cup (250 ml) plant milk (we used soy)

3 Tbsp (21 g) ground flaxseed

1.5 cups (180 g) all-purpose plain flour

2/3 cup (130 g) white sugar

1/2 cup (125 ml) coconut oil

1/3 cup (85 ml) blood orange juice (about 2 medium oranges)

1 Tbsp (18 g) poppy seeds

1 tsp (5 g) baking powder

1 tsp (5 g) orange zest (about the amount from 1 orange)

1/2 tsp salt

1/2 tsp vanilla

1.5-1.75 cups (187-220 g) icing sugar*

Juice of 1 orange

Zest of 1 orange

Pinch of salt

  1. Preheat the oven to 350 degrees (180 C). Add plant-based milk and ground flaxseed to small bowl and let thicken for 5 minutes.

  2. In a medium size bowl, mix all the dry ingredients together - the flour, poppy seeds, baking powder, orange zest, and salt. Once combined, add all the remaining ingredients, the milk and flax mixture, coconut oil, sugar, orange juice, and vanilla. Stir until smooth.

  3. Pour into a parchment lined loaf tin and bake for 40-45 minutes, or until golden brown and firm (or when a knife comes out with few crumbs).

  4. While the loaf is baking, you can make the icing by mixing all the icing ingredients together in a small bowl.

  1. *Icing: for a runnier, reduced sugar icing, use 1 to 1.5 cups icing sugar.

  2. Substitutions: you can use any citrus fruits, like regular oranges or lemons. Grapefruit would be an interesting challenge, it’s hard to get a concentrated grapefruit flavour!
