Herb and Garlic Tofu and Cashew Spread

​When we think of a savoury, satisfying, and quick breakfast option, bagels and cream cheese are the first thing to come to mind. There are spreads that are all tofu, or all nut based, but we decided to use a mix of tofu and nuts to boost the protein, texture, and flavour profile. We tried it with cashews and almonds and loved it both ways. Almonds gave it a slightly more hummus like texture, while cashews made it more creamy.

It also makes for a fantastic snack as a vegetable dip. A warning though: it'll can cause garlic breath... you've been warned.

Try changing it up by adding green onions, sun-dried tomato, or paprika!

Yield: approx. 2 cups Prep Time: 10 min Set Time: 60 min Total Time: 70 min (not including overnight nut soaking)


1 block (325 g) firm tofu, drained and gently pressed

3/4 cup (112.5 g) raw cashews. Soaked overnight.

3 cloves garlic

4 Tbsp (60 ml) lemon juice (roughly 1 whole small lemon, or 1/2 large lemon)

1 Tbsp (15 ml) apple cider vinegar

2 tsp (10 g) garlic powder

2 tsp (10 g) onion powder

2 tsp (10 g) salt

1/2 tsp cracked black pepper

1/3 cup (8 g) chopped fresh chives

1/3 cup (8 g) chopped fresh dill

3 tbsp (4.5 g) chopped fresh basil


  1. Using your hands, press the tofu over the sink to drain some of the water (if you like a thicker spread - more hummus texture - squeeze out more water). Then dab dry using a clean dish cloth. Add to a high speed blender with the cashews, lemon juice, vinegar, garlic, and spices. Blend until smooth, stopping to scrape down the sides as needed.

  2. Place in an airtight container and fold in the herbs.

  3. Once mixed, place the spread in the fridge for at least an hour to set.


  1. Storage: refrigerate in an airtight container for up to 4 days.

  2. Variations: you can try using raw, blanched almonds instead of cashews. Try adding paprika powder, sun-dried tomatoes, or green onion for a different flavour.
