Sweet Lime Summer Fruit Salad

We're nearing the end of summer here in the northern hemisphere, but I feel like hanging on to those summer vibes just a little bit longer.
Featuring this whatever-fruit-you-have-available fruit salad. Seriously, anything will do. I just happened to have some of my favourites on hand for this one: mangoes, strawberries, blueberries, kiwis and grapes.
The dressing only calls for 2 ingredients, too. Love me some minimal and delicious eats!




Enjoy on the patio, at a potluck, after dinner to satiate the sweet tooth, or as an afternoon snack.
You can enjoy it as is, or serve with some plant-based yogurt and homemade granola, to make a fruit salad parfait.

Sweet Lime Summer Fruit Salad

Yield: approx. 4 cups Prep Time: 10 min Total Time: 10 min
INGREDIENTS: Fruit Salad
1 mango, peeled and cubed
1 cup (150g) fresh blueberries
1 cup (150 g) purple grapes
1/2 cup (75 g) fresh strawberries, quartered
2 kiwis, sliced or cut into cubes
INGREDIENTS: Sweet Lime Dressing
1/2 lime, juice and zest (~1 Tbsp or 15 mL)
2 tsp (5 mL) agave syrup (optional)
Directions
Add all fruit to a bowl.
In a small bowl, whisk together the agave syrup and lime juice, then add to the fruit and toss to combine. Serve immediately. Enjoy!
Notes
Variations: add any fruit of your choosing, such as raspberries, oranges, apples or pears.
Storage: store in an air-tight container in the fridge for up to one day; if possible, it’s best to store the dressing separately and mix with fruit when ready to serve to keep the fruit fresh/crisp.
