Caramelized Apple & Walnut Confection

I had a tough time naming this one. Is it a salad? Kind of. A snack? Sure. A side dish. Yup, that would work too. A dessert? Absolutely! So to you I present this ‘confection’.

This can be enjoyed on so many occasions! As if you’d need an excuse to dig in though. Go ahead. It’s good for you. Make a bigger batch and eat it as a salad. Make it ahead of time and take it to work or school as a snack. Maybe you’re craving something sweet after dinner but know there’s too much sugar and butter in that store-bought apple pie. Have this instead – I guarantee it’ll satisfy your sweet tooth!


Caramelized Apple & Walnut Confection

Yield: 1.5 cups

INGREDIENTS
1 apple, very finely diced
1/2 lemon, juice and zest
1/2 cup (65 g) raw walnuts, finely chopped
1 tsp (5 mL) maple syrup
1 tsp (4 g) sugar
1/2 tsp (3 g) ground cinnamon
pinch of salt
DIRECTIONS
Combine the apples, lemon juice, lemon zest, cinnamon and salt into a bowl. Stir to combine.
In a small pan over medium-low heat, toast the walnuts, maple syrup and sugar stirring constantly for ~4 minutes or until lightly caramelized.
Mix the walnut mixture into the apple mixture.
All it to sit for a couple of minutes to soak up the flavours (if you can't wait - go ahead and enjoy immediately!)
